Yangshuo Beer Fish

For its special taste and cooking method, Beer Fish is one of the most famous dishes in Yangshuo. At present, it's well-known and attracts many tourists all over the world. At the same time, many Beer Fish Restaurants grow up very rapid which seem to be the bamboo shoots in the spring.


It is said that this special local dish was discovered by chance. In the early period, there were a few hotels and restaurants in Yangshuo, what was worse, the facilities were very simple. So most of tourists wouldn't stay in Yangshuo after they got off the boat. Usually, the drivers had their meals nearby the river. One day, a driver saw the fish was burnt with smoke in the pan, he poured one bottle of beer into the pan without thinking. The people around thought the dish must be over and couldn't be eaten. To their surprise, the dish was so fragrant and soft. From then on, this local dish was spread over every corner.

Usually, you had better choose one carp to make this dish if you want to get the best taste, because of the carp is fat but not greasy. At first, take out the abodominal organs after slivering it, but do not to scrape the scale; Secondly, put some soy sauce on it , and then fry it with ginger and garlic till the scale turn yellow. Especially, do put some tomato, green pepper, celery, mushroom and sour pepper into the pan. Of course, don't forget to put ingredients and oyster sauce, and the most important thing is not to forget to pour the beer into it. After that, well, it will be one delicious dish after cooking it well.

Maybe it seems to be one simple dish, but it's a technical work indeed. If you are interested in it , you can do it by yourself at home.
